You can spend a LOT of money on special spice blends. But why would you when you probably have all the ingredients to make your own? This is Emeril’s Creole Seasoning (Essence) from his own recipe. He calls it Creole but I use for any dish that calls for Cajun spice as well.
Creole Spice
2 1/2 Tbs paprika
2 Tbs salt
2 Tbs garlic powder (I use garlic granules)
1 Tbs freshly ground black pepper
1 Tbs onion powder (I use onion granules)
1 Tbs cayenne
1 Tbs dried oregano
1 Tbs dried thyme
Procedure
1. Combine all the ingredients thoroughly in a bowl. Store in an airtight container away from light. Use within three months.

NOTE: As I mentioned above, I like to use garlic and onion granules. I feel they have a superior taste and texture. But you do you!
Yield: 2/3 cup
