Eggplant Pizza

I LOVE pizza. If I were stranded on a deserted island and could only have one foot – yup, it would be pizza. But after developing some health issues I had to pretty much give up wheat.

So I had to find other ways to enjoy it.  And here is one of many!

It all starts with this. A nice, beautiful eggplant.  Slice it thin – about 1/4″.

Cook up some mild Italian sausage. Or spicy – whatever you prefer!

Make an egg wash – one or two eggs depending on how much you’re making.

Mix up some Parmesan cheese with seasonings – I used, garlic granules, parsley and oregano.

Dip your eggplant slices in the egg wash then coat with the seasoned Parmesan cheese and lay on a baking sheet lined with parchment.  Bake at 400 degrees for 10 minutes then turn and bake for 10 more minutes.

Remove from oven and they look like this! Aren’t they beautiful?

While the eggplant is baking, mix your sausage with some pizza sauce.  Spoon onto each piece of eggplant and top with mozzarella.  Back into the oven for a few minutes and you’re ready to enjoy!
