So chaffles. I ignored this fad for the longest time but I finally had to give in. The idea was just too good when you’re on a primarily Keto diet.
One of my very first tries was with peanut butter. Because….well, peanut butter! And of course they were even better with some butter melting on top!
- 1 egg
- 2T creamy peanut butter
- 1T cream cheese
- 1/4 tsp baking powder
- 1 1/4 tsp Truvia
- splash of Almond extract (because I didn’t have vanilla)
It works best to have the egg and cream cheese at room temp for ease of mixing. At the time I first made these I only had some Truvia on hand for the sweetener so that’s what I used. Now I tend to use Swerve instead so if you have that on hand the amount would be 1 Tbsp.
Beat egg first and then add other ingredients – mix until smooth.
Heat your waffle maker (these were made with the popular Dash Mini Waffle Maker. This recipe ended up making 3 chaffles. Pour batter on the Dash and cook for about 4 minutes each. Enjoy!
